The bioconversion of ferulic acid, a by-product of rice bran oil that naturally occurs in the walls of plants has been intensely studied. As a precursor, ferulic acid is a readily available substance that shares high structural similarity to vanillin and can be naturally transformed into vanillin by a traditional fermentation process. The biotechnology process guarantees the use of non-GMO (non-genetically modified) rice as a starting raw material, and a non-GMM strain (non-genetically modified microorganism) or non-bioengineered strain in order to convert ferulic acid into vanillin.
